Baking with Claire: Her Iconic Granola Recipe
Ingredients:
4 cups of rolled or quick oats
1.5 cups of raw nuts and/or seeds
(slivered almonds, pecans, walnuts, pumpkin seeds, sunflower seeds, chia seeds, flax seeds, quinoa…and I add in a little coconut flakes)
1 tsp salt
1/2 cup melted coconut oil (or olive oil)
1/2 cup maple syrup or honey (I do half & half)
1 tsp vanilla extract
2/3 cup dried fruit (I used dried cranberries)
Steps:
1. Preheat oven to 350’C
2. Line a large baking sheet with parchment
3. Mix in all dry ingredients.
4. Add in the wet ingredients & mix well until everything is lightly coated.
5. Pour onto the baking sheet in an even layer.
6. Bake until golden brown about 21-24 mins, stirring halfway.
7. Let the granola cool completely then top with the dried fruit.
8. Break the granola into pieces with your hands to the size you want.
9. Store in an airtight container at room temperature for up to 2 weeks, or in a sealed freezer bag for up to 3 months.
